Gentiana lutea or yellow gentian is an alpine plant growing 1-2 inches high on grassy alpine and sub-alpine meadows in central and southern Europe. The root is intensely bitter and has a long history of medicinal and beverage use. Bitter substances makes the body take stronger hold of digestion increasing activity in the liver, stomach, pancreas and intestines.

Ginger Root

Ginger originates in the East Indies: Indonesia, Philippines, Singapore. The fleshy root is spicy and fiery, accelerating sluggish digestion and countering fullness and nausea. Ginger is in the same family as turmeric and cardamom.

Chicory Root

Light-blue chicory flowers are often over-looked as they grow ubiquitously along roadsides where soil has been disturbed. It prefers such “distressed” locations and acts as a pioneer plant to restore order. The hard deep roots are roasted and used as a non-caffeinated coffee substitute. Chicory has tremendous vitality, putting out abundant flowers that last only a day but are replaced again and again every day for months – a feat in itself! The tough root is the part used in Chicory Ginger Bitters.

Wormwood

Here the leaves and stems are the bitter parts of the plant (Artemesia absinthium) native to North Africa and temperate Eurasia. Like Gentian, it is used to flavor some alcoholic beverages such as vermouth and absinthe. It is intensely bitter and like chicory, it prefers to grow on uncultivated, inhospitable paths, field margins and rocky slopes.

Black Pepper

Black Pepper is a flowering vine originating on the South West Coast of India and was an early part of the spice trade. It fires digestion and imparts a strong flavor to Chicory Ginger Bitters.
